Salmon with pistachio oil and asparagus

I guess if I were a responsible food blogger I would find some other way to cook my asparagus. I could, but I won’t. A farmer told me that we can expect to have asparagus for another two weeks so I’m just going to languish in my rut of grilled asparagus…I’ll enjoy every minute of it.

The salmon was just pan fried in butter and napped with the deliciousness that is pistachio oil. You know that I’d post something more complex but why mess with perfection.

    Vanessa, I must buy some of that pistachio oil! Tonight I made roasted garlic scapes as our side dish. Olive oil, salt and mild, nutty, garlic goodness! I may chop up the leftovers (2 CSAers didn’t want theirs!) and throw them in a frittata. Or I might just snack on them!!

    Great that I saw this today. I found some beautiful leeks at the store and also picked up a fillet of wild salmon. So tonight I sliced the leeks into quarters lengthwise, then in 1″ cross sections, sautéed them in a little butter until they wilted, salted them lightly, pour in about 1/3 cup of dry vermouth, put the salmon on top, salted it lightly, and covered the pan for 14 minutes over moderate heat. I plated half the leeks, half the salmon, and pour over some pistachio oil, which I had bought and had no idea how to use. Perfection, indeed! Many thanks.

    I have the same issue w/ asparagus, where I want to cook it a new way, but I’m just so happy with it simply prepared! I did just see a recipe for chilled asparagus soup on the Perfect Pantry blog the other day, and it might just be the new asparagus recipe I’ve been waiting for :)

    I found my pistachio at Whole Foods (in the US). It was HALF PRICE, so I bought it, along with some pecan oil, also on sale.
