Salmon with pistachio oil and asparagus

I guess if I were a responsible food blogger I would find some other way to cook my asparagus. I could, but I won’t. A farmer told me that we can expect to have asparagus for another two weeks so I’m just going to languish in my rut of grilled asparagus…I’ll enjoy every minute of it.
The salmon was just pan fried in butter and napped with the deliciousness that is pistachio oil. You know that I’d post something more complex but why mess with perfection.

Vanessa, I must buy some of that pistachio oil! Tonight I made roasted garlic scapes as our side dish. Olive oil, salt and mild, nutty, garlic goodness! I may chop up the leftovers (2 CSAers didn’t want theirs!) and throw them in a frittata. Or I might just snack on them!!
Great that I saw this today. I found some beautiful leeks at the store and also picked up a fillet of wild salmon. So tonight I sliced the leeks into quarters lengthwise, then in 1″ cross sections, sautéed them in a little butter until they wilted, salted them lightly, pour in about 1/3 cup of dry vermouth, put the salmon on top, salted it lightly, and covered the pan for 14 minutes over moderate heat. I plated half the leeks, half the salmon, and pour over some pistachio oil, which I had bought and had no idea how to use. Perfection, indeed! Many thanks.
I want pistachio oil and I want it right now!
Sounds fabulous, and the photo is gorgeous too.
The receive looks perfect to me…who needs complexness! I would love to have that any night of the week!
Absolutely perfect! Love it!
This sounds amazing! Where do you find pistachio oil? We’re having a salmon recipe contest and would love to have you enter this recipe! The prize is 15 Pounds of Wild Salmon (three separate 5-lb. shipments). Check it out at http://marxfoods.com
I have the same issue w/ asparagus, where I want to cook it a new way, but I’m just so happy with it simply prepared! I did just see a recipe for chilled asparagus soup on the Perfect Pantry blog the other day, and it might just be the new asparagus recipe I’ve been waiting for :)
MadLisa, scapes are fabulous. I actually cook them the same way I do asparagus.
LeisureGuy, that sounds really tasty. I’ll have to give it a try.
Kalyn, pistachio oil is really pretty and tastes so good too.
My Sweet & Saucy, I’m all about simple.
Christie, thanks.
Erin, I saw that recipe too and thought…maybe I’ll give that a go. Maybe…
I found my pistachio at Whole Foods (in the US). It was HALF PRICE, so I bought it, along with some pecan oil, also on sale.
You can’t go wrong with simply grilled asparagus! Looks wonderful with the pistachios!
LeisureGuy, I forgot to mention that the pistachio oil came from Vom Fass.
brilynn, don’t you think a pistachio cake would be delightful?
