		<description>There is a restaurant in NYC called Balthazar, a great French style bistro. They published a superb cookbook a year or two ago. I have yet to have a bad experience with one of their recipes.

We did their short ribs last week, substituting only pearl onions for the sliced onions called for (oddly, the picture accompanying the recipe showed pearl onions, so that&#039;s why we did it).

It was simply unbelievable. One of the best dinners I have ever had.</description>
