Keeping the knife sharp…how to use a steel
I got some new knives recently and I realized that although I have a steel, I’ve forgotten how to use it properly. So instead of screwing up my new knives I think a little instruction is in order. This video does the trick for me. Once this drops down in my blog I’ll add it to the sidebar as Geek Instructions…I know I’ll need a refresher course every once-in-awhile.
There is also a good Alton Brown video about knife sharpening. It covers not only honing but sharpening. Check it out if your knives actually need to be sharpened.

The Youtube honing video is quite good but the Alton Brown thing is a disaster. One should never never NEVER use a process that creates that much heat (so as to produce sparks!!!), this RUINS the metal.
