Argh!!! Yes, that’s right, I said “Argh!”. It has been a busy week and I’ve been cooking family favorites, working, doing family errands, providing technical support to the family geeks, booking our travel to London in March, and getting our passport paperwork and photos completed. We’re going to apply for our passports tomorrow and when that’s completed I’ll breath a sigh of relief.

Tonight we had BBQ Pork for dinner. Last night I tried my hand at egg rolls again and they were fabulous. I also made a rice noodle stir-fry that was almost identical to Pad Thai but without all the Pad Thai-ish goodies (which I didn’t have time to organize). I substituted some of the pork, ginger, shallot, and garlic mixture that is the base of the egg roll filling and it was spicy and delicious. I served this with a daikon, carrot, jalapeño, cilantro salad dressed with rice vinegar and so it was sort of Pad Thai-ish.

Spicy Noodles
adapted from Hot Sour Salty Sweet by Jeffrey Alford and Naomi Duguid

A bunch of narrow, dried rice noodles

1/3 pound ground pork
3 tablespoons finely chopped ginger
3 tablespoons finely chopped shallots
3 tablespoons finely chopped garlic

Mix together:
1 teaspoon sugar
1 tablespoon rice vinegar
1 tablespoon water
1 tablespoon soy sauce
1 tablespoon fish sauce
1 tablespoon hot sauce

Place the noodles in a heat-proof bowl. Boil some water in your kettle and pour it over the noodles. Let them soak until they are soft.

In the meantime brown the ground pork and add the shallots, ginger, and garlic. remove from the pan and heat a tablespoon of oil on medium to medium-high depending on your stove.

Drain the noodles well, tossing them to get out as much of the water as you can.

Add the noodles to the hot pan and cook them for a few minutes allowing them to brown and stick and fall apart. Add the sauce mixture. Stir a little more, add the pork, stir, you’re done.

    Yum! I LOVE spicy noodles. Thanks for sharing the recipe. I have not been successful with eggrolls yet . . . yours look actually edible :)

    I’ve usually had disaster with rice noodles but these turned out well.
