BBQ Pork Sandwich

Today as I was walking through the conservancy I saw a red fox. Dave and my older son claimed to have seen foxes but I couldn’t believe it. But I saw one with my own eyes today and according to the DNR they are quite plentiful. It was a cold, windy day today and while we all worked on projects throughout the house and outside, dinner was cooking. This is one of the few dinners I use the crock-pot for. Season a pork shoulder roast and brown it on a high temperature in a cast iron skillet. Transfer it to the crock-pot and cook for 8 - 10 hours. When its done it has a rich, full pork flavor and is very tender. Take it out remove any fat and gristle and rough chop the entire roast. Serve on toasted buns with your favorite BBQ sauce on top.
Our pork comes from Willow Creek Farm. They humanely raise purebred Berkshire pork. The pigs roam freely over their fenced pasture. They live a good life and make for great eating.
The cole slaw is simple. I wanted it to be the creamy kind so I mixed together:
1/2 cup mayonnaise
1 tablespoon plus 1 teaspoon white vinegar
1 teaspoon hot sauce
1 teaspoon, sugar
1/2 teaspoon celery salt
Pour that over:
1/2 medium head of cabbage, shredded
1 large carrot, shredded
1 small red onion, shredded
Toss to mix and serve.

I also made a rice noodle stir-fry that was almost identical to Pad Thai but without all the Pad Thai-ish goodies (which I didn’t have time to organize).
